Hiiiiiiiiii!! It's been a while :)
Y'all, my baby is growing like a weed! I can not get over the fact that Wilson will be 1 years old in just a few weeks! Here' a short recap of what this cutie pie has been up to the last few months...
We've learned how to crawl...and he is FAST!
He stands on his own..
He can say Dada and Mama..
He can clap..
He has 4 teeth..
Went on his first Wilson family vacation to Austin, Tx...
Went on his first airplane ride...
Went on his first Grundy family vacation to Maine...
annnnnddddddd......started daycare.
Which leads me today's post.
Daycare was such a fear of mine..I think it was harder on me than it was on Wilson. I honestly dreaded his first day of daycare. But, here we are almost a month in and he's really getting the hang of it!
Like I said, we are newbies at this daycare thing. Thankfully, we had a lot friends recommend the daycare that we are using and that did make it a little easier on the first day dropping him off.
Yes, there were tears (by me and Wilson) on day one...and two...three..four..seven...you get the picture..but Wilson has made so much progress with going straight for his teacher and letting her hold him first thing in the morning without crying! YAY!..
One thing that we were worried about with this transition to daycare was if the daycare would feed our child like we do. Would they laugh at us for giving him whole food the way we do at home (baby lead feeding/weaning)? Would they only want to feed him baby food? Thankfully, our daycare is very open to doing whatever Mom and Dad wants for their little one! We send lunches and snacks for Wilson everyday.
Now that school is starting and life is getting even more busier I was really struggling with getting meals prepared for Wilson's daycare lunches/snacks. Our daycare is Peanut free, which is great, but that's also one of Wilson's fav snacks..so I had to go to my trusty friend, Pinterest, for some inspiration and recipes. Here are two of our recent favorites:

Pizza Rolls c/o What Lisa Cooks
I'm all about easy snacks and this is def. one of those. If you saw on my Instagram when I had made these, you saw that I was in the middle of eating on and Wilson took it from me and ate it! haha! I'm actually thinking about making these for a snack for his birthday party...
Mini Chicken Pot Pies c/o Charisse Yu
Y'all these are sooooo good and sooooo easy! My little one love these too! (ps so did I!) They even taste good warmed up in the microwave for leftovers.

Also, Wilson's Lolli (my mom) personalized his daycare backpack! How stinkin cute is this!?!
